His first, Green Goat Food was awarded top 3 street food in London 2013, and under his directorship, Claude’s Kitchen, Amuse Bouche & The Tommy Tucker have become top London foodie destinations. A unique creative talent with a strong head for business he has quickly developed a reputation for creating forward-looking concepts that delight the consumer. Combining his background in science and maths, several years in Michelin–starred kitchens, Club Gascon and Petersham Nurseries, and with his passion for surfing and time spent living in Cornwall, Claude’s signature adventurous, seasonal and colourful dishes have proved enduringly popular.
